Kartause Ittingen uniquely combines monastic values , such as culture, spirituality, education, welfare, hospitality and self-sufficiency.
For this reason, the foundation runs its own farm and market garden. These values are put into practice and reflected in our zero-kilometre dishes. These culinary experiences are created using 100% Ittingen ingredients, which are grown on our 100-hectare plot of land. The produce either goes straight to our kitchen or is processed and refined into specialities by our in-house producers. Hardly any other restaurant in Switzerland is supplied with over 200 products from its own producers.
With our zero-kilometre menu, we are also making an important contribution to promoting regional produce and reducing CO₂ emissions. We are proud of our products, which are of the highest quality and freshest possible. For instance, the distance from the milking parlour to the on-site cheese dairy is less than 300 metres. Our herb garden is located right next to the kitchen, and our vineyards surround the former monastery.
