The milk from our 55 cows and is used to make various milk and cheese specialities in the on-site dairy. Meanwhile, the butcher's shop uses its own veal, lamb and pork from Schloss Herdern to make Ittingen specialities.

Cheese
The annual milk production is around 450,000 kg. Our cheese-making team uses this milk to produce ten different types of cheese, as well as yoghurt, butter and pasteurised milk. Our comprehensive quality and hygiene controls, which cover everything from feeding the dairy cows to processing and caring for the maturing cheese, enable us to offer guests and customers extremely tasty dairy products. A selection of Ittingen cheeses is also available from major distributors in eastern Switzerland.
Meat
The monastery shop sells a variety of meat products, including the finest sausages such as Klostergibeli, Chnoblipantli and Pandur, as well as meatloaf, raw bacon, veal sausages, Wädli and much more. Guests at the Restaurant Mühle can enjoy meat specialities from the monastery's own butchery.
