Rainbow trouts and chicken eggs

Hühnermobil Kartause Ittingen

Our smallest rainbow trout farm in Switzerland is fed by fresh water from our own spring. And our 120 chickens live in a mobile home.

Free-range chickens in a mobile home

120 happy, free-range chickens ensure that all the fresh eggs needed for the kitchen and monastery shop are sourced from the farm itself. Their mobile chicken coop is regularly moved a few metres to give the chickens access to fresh green fodder and protein-rich food, while preventing damage to the meadow and overfertilisation of the soil. This diet gives the eggs rich yellow yolks and a high omega-3 content. A solar panel on the chicken coop provides a self-sufficient supply of electricity for lighting, exit flaps and the pasture fence.

Fish farming with its own spring

The fish farm is run according to ecological principles and is ideal for employing people with support needs. The trout are either smoked in the farm's own smokehouse and sold in the monastery shop, or they go straight from the water to the restaurant kitchen.
